Q: Is the window made of glass or plastic? I want to be able to use in the over as well.

The B-2C, milk thermometer has a plastic dial. I require reading glasses, but with of the glasses I can see the green zone and know that is 150 to 170, so can tell if chicken is done. As well there is a red arrow at the 140 Mark and the boil mark. Using a glass of ice water I can calibrate the dial easily as instructed in various YouTubes

Q: Can you use this submerged in water for sos vide cooking?

This was such a piece of junk I threw it out… I doubt it’s that waterproof though and would look for a thermometer specifically made for sous vide.

Q: Would this work for checking the temperature of salmon?

Thick salmon , yes . it says the tip should be in about 1 to 2 inches for the best reading . thin meat could be a challange . the sensor is in the tip end . temp range 0 F to 220 F hold the dial or clip when measuring . don't let the tip touch a hot dish\tray .
